A junmai ginjo that fully conveys the charm of Aiyama, a rare sake-specific rice. Characterized by its thick sourness and soft, mellow mouthfeel, this sake expresses the individuality and potential of Aiyama, and the storytelling and changes in the different temperature ranges after it is poured into the glass will change and spread the flavor. On the nose, it is floral & fruity (strawberry, mochi), with minerality and fresh acidity.
This product is specially prepared with wine yeast provided by Friendship Warehouse wineries in France. Using Yamada Nishiki rice harvested in Hyogo Prefecture, you can enjoy the unique touch, refreshing acidity, and ripe fruitlike sweetness that can only be experienced with this product.

Brewed as a sake to accompany meals, pair it with Malty or ricey like mochi or dango, red meat like pork or stew, teriyaki. It has a fruity ginjo aroma and a moderately rich and refreshing taste. You can enjoy it from cold sake to lukewarm sake.
A hint of cloves and other spices is intermingled with the overall aromatic complexity. The wine is supported by a smooth, supple structure and fresh flavours, confirming that the Lolol valley provides exceptional conditions for this grape.
Serve with red meats and semi-hard cheeses such as gouda, gruyere or edam.
