You're invited to our Sake Masterclass on 14 Dec, Sat. Hosted by Ms. Kanako Takahashi; a Japanese native and sake expert, who will personally guide you through a tasting of 5 sakes beautifully paired with a catered selection of cheeses.

HOUOUBIDEN "Black Phoenix" - Junmai Ginjo Sake - Japan
Characterized by its thick sourness and soft, mellow mouthfeel, this sake expresses the individuality and potential of Aiyama, and the storytelling and changes in the different temperature ranges after it is poured into the glass will change and spread the flavor.
HOUOUBIDEN - Junmai Ginjo Sake - Japan
The palate is sweet & soft. Brewed as a sake to accompany meals, pair it with Malty or ricey like mochi or dango, red meat like pork or stew, teriyaki. It has a fruity ginjo aroma and a moderately rich and refreshing taste.
HOUOUBIDEN "Akaban" - Junmai Daiginjo Sake - Japan
Gorgeous aromas of ripe muskmelon and lychee fruit. Perfumed, yet elegant, with a clean and crisp finish. Only pasteurized once to retain freshness and concentration of flavour.
HOUOUBIDEN "Wine Cell" - Junmai Ginjo Sake - Japan
Using Yamada Nishiki rice harvested in Hyogo Prefecture, you can enjoy the unique touch, refreshing acidity, and ripe fruitlike sweetness that can only be experienced with this product.
KOZAEMON - Junmai Yuzu Sake - Japan
Made from one of the most popular citrus fruits in Japan, this Yuzushu has a soft yet refreshing flavour perfect for pairing with many types of foods.

Ruby red with purple notes. The scents are delicate with hints of violet and red fruit. Semi-sparkling (frizzante), foamy with an effervescence produced by natural fermentation. Intensely fruity, fresh, lively, harmonious, medium body. Enjoy as an aperitif, but also as a party wine with pizza, snacks, light meat, pasta dishes and desserts

Santa Julia’s new proposal for those who prefer light, fresh, fruity wines that are very easy to drink, Nacional pays tribute to two flagship varieties in Argentina: 60% Semillón and 40% Torrontés. With a long-standing history in Mendoza, Semillón’s best expression is achieved in cool, mild climates like that of Uco Valley’s, while Torrontés is Argentina’s single native grape variety.

Dark violet with bluish reflections. On the nose it has a high impact intensity, with very fresh and fruity aromas reminiscent of fresh strawberries, raspberries, cherries, typical of carbonic maceration, combined with a soft hint of green notes that complete the profile of this wine. Juicy with sweet tannins, good natural acidity that provides very particular freshness, combined with a long finish. Making this wine very fresh and easy to drink.

Classic Central Otago aromatics of fresh strawberries, raspberries and wild thyme. The palate is full of primary fruits, jammy character and finishes with smooth tannins and oak sweetness.
Dry, crisp with refreshing acidity of green apple, pear and lime zest with after taste of minerality and flint. This wine has hints of fizziness on the palate
Classic is a own category in the German quality designation system. Grapes for Classic must meet higher ripeness requirements and can only be made from traditional varieties which are typical for the region, i.e. Riesling for the Mosel. Classic wines must always be made in a harmonious dry style only.
A medium-bodied, elegant dry wine. Crisp and full of flavour hinting of ripe apples and a touch of the slate soil it was grown on. It is a very well-balanced, dry, very food-friendly wine.

Selbach-Oster Pinot Noir is light in colour with vibrant red fruit notes reminiscent of red currants, raspberry, and strawberries. The palate also has a hint of spice and an underlying savoury note.

Silver Lining Pinot Noir shows aromas of dark cherry, pomegranate and hints of red licorice. The bright red fruit is balanced by notes of vanilla bean, mushroom, and toasty oak on palate, finishing with soft, plush tannins.

ABOUT CHEF WEI SHAN
Award-winning Chef Wei Shan’s passion for food began early, leading him to master Asian cuisine and hone his skills in French cuisine at the 3 Michelin star Les Amis Restaurant (then 2 star). He had also staged at various Michelin star restaurants during his free time.
In 2017, he founded Mixsense Private Dining, initially a charity event supporting the Dyslexia Association of Singapore as he is dyslexic himself, which evolved into a successful business due to great support garnered.
During the 2020 pandemic, he then pivoted by creating artisan donuts, which gained popularity on social media and led to the opening of Sin & Savage Bakehouse. From sinful sweets to delicious savage dishes, Sin & Savage offers a wide variety that even the pickiest of eaters will enjoy.

This wine has aromas of intense grapefruit and nectarines with hints of citrus blossom and subtle oak nuances. The palate displays a concentration of citrus and stone fruit with a touch of creaminess and a nutty texture due to partial malolactic fermentation and bâtonnage. The wine is effortlessly mouth filling with a delicate balance of fruit and acidity and a long lingering finish, lasting well after drinking. A wine of both power and finesse, it is well suited to rich poultry or creamy shellfish dishes with sautéed vegetables. This wine will develop further complexity in bottle over the next five years.
This wine displays complex aromas of blueberry, plum and cassis, with gentle oak support. The wine is effortlessly mouth filling with juicy dark fruit flavours balanced with acidity and gentle fine-grained tannins which lead to a long finish. It is well suited to red meat dishes such as a roast leg of lamb with garlic and herbs.
