How to pair it

Seafood, grilled polenta with wild mushrooms, barbecued chicken, rosemary and prosciutto skewers and stuffed peppers.

Irrigated vineyards in the Riverina. Warm climate, but low yielding with healthy canopies to protect from sunburn. Various vineyards differentiating between light brown soils to dense heavier soils.

Fermentation and Maceration

The grapes are harvested during the cool night, crushed and pressed, then clarified 12 hours later. the juice is fermented in stainless steel tanks at 14-16 degrees. once fermented, the wine is left to mature on fine grained oak for a further 6 months. in preparation for bottling, the wine is fined and stabilised, before final filtration.
