A stunning example of Pouilly-Fume and another clear demonstration of the difference between the old-world and the new. Aromas combine grapefruit and herbal notes but it's not aggressive like many modern examples of Sauvignon Blanc. Light and fresh on the palate, displaying a good balance of sweetness vs. acidity.

How to pair it

Pair with fish when young and then with poultry or white meats after several years. Smooth, aromatic and with a long finsh, ‘Villa Paulus’ will be excellent with a pike served with white butter sauce, a risotto with porcini mushrooms, scallops cooked in Pouilly-Fumé sauce, or a turbot served with lemon and girolle mushrooms. Aged around 5 – 6 years, it perfectly matches poultry with morel mushrooms, or scrambled eggs with truffle.

Production Style

More than Sustainable : -Since 1980 : abandonment of chemical fertiliser on all of our vines. -Since 2002 : abandonment of herbicide on all 22 Hectares of vines. -Since 2006 : abandonment of insecticide on all 22 Hectares of vines. -Mildew control : we use the bare minimum of fungicide, but not only copper, as we believe that long-term accumulation would be harmful for the soils Rainwater collection to fight mildew with demineralised water and thus reduce as much as possible the dose used. The vines are lightly hoed and regularly tilled by hand. Only organic amendments officially agreed for Organic Farming are used at the end of autumn. Treatments are reduced to bare necessities in order to protect fauna and soils, which are crucial for an appropriate development of the vegetation.
