Fermentation and Maceration:

MLF is a secondary bacterial fermentation that occurs naturally in wine. The bacteria ferments malic acid to lactic acid in this process. All red wine from Mooiplaas Wines undergo MLF naturally.

Malolactic Fermentation:

Maceration is the term used for skin contact. All red wine from Mooiplaas Wines are made by using skin maceration in order to extract colour from the skins of the berries, as well as fermenting on the skins. The time of maceration may vary according to the wine style. In the case of white wines pre-fermetation maceration is used for shorter periods to extract flavour from the skins, and fermentation never takes place on the skins.
