ELYSIAN SPRINGS "SILENT WATERS" - Pinot Noir Adelaide Hills, Australia

Clear dusty garnet colour. Aromas and flavours of cranberry tart, menthol mint, eucalyptus honey, and tea with a supple, vibrant, dry-yet-fruity medium-to-full body and an engaging, pickled beets, roasted cherries, and nuts finish with silky tannins and light oak.

Product Description

Elysian Springs is a 200-acre estate located in the pristine northern end of the Adelaide Hills district, bordering the Eden Valley. It is the birthplace of the River Torrens, the fresh water tributary key to the establishment of the capital of South Australia, the city of Adelaide.

The property started its journey when established by the Seppelt family back in 1980 when it was planted to Syrah, Sauvignon Blanc, Pinot Noir and Chardonnay. Today, the journey continues where we endeavour to use sustainable viticulture along with biodynamic and organic techniques to produce wines with a true sense of place. Our passion for the land and all things vinous are what drive us to produce wines and food that best represent the beautiful part of this land we are custodians of.

  • Whole bunches , hand-selected and picked in the cool of the early morning
  • Destemmed without crushing the fruit. 30% of this was whole cluster fermented
  • Remaining fruit was crushed and went through traditional open fermentation
  • with 30 day extended skin contact. 
  • These were racked into 50% new and seasoned French oak hogsheads.
  • Bottled directly thereafter without fining and with minimal filtration to capture the purity of taste and texture of our Pinot Noir.
