Very fruity nose of citrus fruits (grapefuit, lemon) and stone fruits (white peach). Some delicate white flowers and mineral notes give finesse. At first, in the mouth, the wine is ample but it is then followed by a beautiful and refreshing acidity. Long delicate and salty finish. A pure and elegant wine. Vintage in image may vary. Harvest method The harvest is destemmed before the grapes are pneumatically pressed.
Fermentation & maceration The harvest is destemmed before the grapes are pneumatically pressed. The must is allowed to settle then the alcoholic fermentation begins in stainless steel vats. The fermentation temperature is controlled between 17°C to 21°C to obtain a more fruity wine. We leave our wine on the lees until January-February to get a rounder wine. Then we rack the wine, filter, and bottle it almost 6 months after the harvest.
Aging 12 months in stainless vats

Situated in the village of Crézancy en Sancerre, 7km from Sancerre, Domaine Sautereau has been producing Sancerre wines for 10 generations. The surface of the vineyard is 18 hectares and the vines are located on 3 villages: Crezancy en Sancerre, Sancerre and Bue. This allows to enjoy the specificities of different terroirs. Typically, the soil is clayey and siliceous. Winemaker David Sautereau uses a blend of old practises and modern techniques to show the terroir characteristics of Sancerre at their best.
