The harvest is destemmed before the grapes are pneumatically pressed.

No sorting table but selection of the grapes on the vines and in the tipper truck

Fermentation and Maceration:

The must is allowed to settle then the alcoholic fermentation begins in stainless steel vats. The fermentation temperature is controlled between 17°C to 21°C to obtain a more fruity wine. We leave our wine on the lees until January-February to get a rounder wine. Then we rack the wine, filter, and bottle it almost 6 months after the harvest.
