VINEYARD

The vineyard is a family history. Our grandparents and great grandparents used to work in the vineyard in addition to farming and breeding cattle. Only in the seventies, during the rise of Sancerre's wines in Paris, did wine growing become a full-time work.

Then in 1981, Daniel and Josette Millet built a cellar on a plot of land named "La Gemière", Domaine "La Gemière" was then born... They started off with 20 acres and develop a wine true to their image.

In 2000, both sons, Sebastian and Nicolas, joined the family farm to work on the 45 acres of vines that the area currently counts. The first works in the cellars, the second in the vineyard. Thus they perpetuate tradition and modernize the field, always in deep respect for their land.

Fermentation and Maceration:

Grapes are pressed and juices flow by gravity into tanks. Must are racked 48 hours later, then kept at low temperatures for 4 to 7 days before fermentation really kicks off. The decision to add wild yeast depends on the parcels. Thermo regulated alcoholic fermentation in between 14° to 20°C follows through for 3 odd weeks.
