Made less than 10 kilometres from the town that bears its name in Lower Normandy. Livarot, in the last century, was the most consumed cheese in Normandy. Camembert today largely supplanted it. Also nicknamed Colonel because of his reed belt, reminiscent of the rank bars. Originally, to prevent the Livarot from sagging during ripening, these strips are made from sedges, swamp reeds, sheared, and then dried.
