1. How to age your wine and build a proper wine cellar.
You should first ask yourself, whether your wine collection
needs to be aged or not. Aging is only good for high quality
wines with potential. In this case, aging the wine will balance
and enhance it and develop more complex secondary aromas. Nonetheless,
most of middle range wine should be enjoyed fresh and early.
If you decide to age some of your wines, you should age them
in a proper condition and here in Thailand, it would mean a
wine fridge. The advantage follows:
- Fixed temperature of 14-16 ° C
- Laying position for the bottles
- Air filter
- No vibration

2. What to do when you only want to stock your wines.
In this case, a temperature up to 25 degrees is acceptable.
A room with air conditioner will provide the required temperature.
Try to put the carton up-side down so the cork will be in
instant contact with the wine But the stock should not be
kept too long.
If you can not leave the air conditioner on all day and night,
try to keep the wine less than 2 months and avoid direct contact
with the heat as much as you possibly can.
Keeping wine in the fridge for a short time is also an option
for middle range wines. Better have a cold wine than hot wine!
Be careful, though, not too keep it too long since it would
absorb the smells of the fridge…
